I love nothing better than a Fall weekend for staying at home, filling the house with good cooking smells. I love to use this time of year to fill up my freezer with meals that we can quickly re-heat on those nights where nobody feels like cooking. I thought I’d share some of my favourite make-ahead recipes with you, in the hopes that you’ll find some inspiration for a little weekend cooking spree too.
Butter Chicken
This is one of my favourite make-ahead meals because you can make a giant pot of it and it makes the house smell AMAZING. It freezes brilliantly and makes a great lunch or dinner option. Simply pair with a piece of naan bread to sop up all the sauce and you’re good to go!

Lasagna
This was the first meal I ever learned to make on my own. It’s become an old standby for me, because I can make a few of them at once, have one for dinner and freeze the others for another time. It’s a great meal to haul out of the freezer when company comes by unexpectedly. Just pair it with a caesar salad (and yes, one of those salad kit caesars is just fine!) and some garlic bread and Bob’s your uncle.

Cabbage Rolls
Mmmm. Cabbage Rolls. I was inspired to make this delightful meal by my mother-in-law, whose cabbage rolls are delicious. They are the ultimate comfort food and they freeze really well, great for popping in the microwave for a quick nutritious lunch or for a hearty dinner.

The best part about these three make-ahead recipes is that they are all relatively inexpensive to make, too. So not only do you get to fill your freezer with delicious lunches and dinners, you’ll have enough left over for a nice bottle of wine to enjoy with them!
